The historical centre of Aveiro is not very big, so if you want to visit its main points of interest, you can easily do it in just one day. However, I think it makes sense to stay a bit longer to visit other places near the city, such as Costa Nova, for example. That is why I suggest 2 days to visit Aveiro.

Coimbra is a old city with all you want to see also a very old University. One big difference is that Coimbra is very hilly, with nearly all the interesting places at the top, while Aveiro is almost flat. Both are interesting in their own way, but for me Coimbra has more to fill a day.
